I had a couple hours to kill yesterday so I decided to make a new beer. Let’s start with the inspiration. I love the label for King Sue by Toppling Goliath. It looks like this:

I love the cartoony look and the colors of both these labels. I decided to make one for myself and then make a beer to try to stand up to the label. So here we go!

Then one day later it had my brew day!

I used Viking Pale Ale malt and flaked oats.

This was BIAB and I mashed for an hour. My target was 155 but I ended up at 154.
I pulled the bag squeezed and then boiled it for 1 hour with an 1oz charge of Citra. I was at 1.061 at the start of the boil.

After an hour I was way over my target and had to little liquid. so I topped up some water and hit my target at 1.071. I’lll take it!

My water adjustments I added 4 grams of Calcium Chloride and help back on the Gypsum. Trying to bring out the Juice and mute the bitterness. We will see…

Then in the fermenter we go!
