Fermenting: We Are The Dreamer of Dreams (NEIPA)colterwKeymasterNot sure it will be dark enough tho.
Well the brew store only had the candi in dark not amber so I think it will be dark enough. I also swapped out that yeast for the Triple Double by Imperial Yeast.
From their site:
B48 Triple Double
The perfect strain for your classic abbey ales. Triple Double produces moderate esters with low to no phenolic characteristics. This strain is tried and true and works perfectly in a production environment. Keep an eye on Triple Double, it likes to sit on top of the wort throughout fermentation which may result in a slow fermentation.TEMP: 65-77F, 18-25C // FLOCCULATION: MEDIUM // ATTENUATION: 74-78%

Fermenting: We Are The Dreamer of Dreams (NEIPA)colterwKeymasterAnd Colter, to answer your question… supposedly it’s the actual carmelizing (boiling to the Candi stage) that develops those flavors.
Yep, i was kidding about the extract. The real question is when is that but brown going to be ready?

Fermenting: We Are The Dreamer of Dreams (NEIPA)colterwKeymasterI basically boil down my first runnings into caramel, then add to the kettle. The idea is to provide a subtle increase in caramel notes.
Isn’t that just LME? Boiled to syrup wort?

He is just getting ready to brew!
Jim your video is too big for the site. You can upload pics but videos are giant. You can always upload to youtube and post a link. Like this: https://www.youtube.com/watch?v=1dQjA5ofWVs

Fermenting: We Are The Dreamer of Dreams (NEIPA)colterwKeymasterI would have to agree the utilization is lowered a little bit. The math involved in the IBU is not really that good in the first place. https://www.experimentalbrew.com/experiments/writeups/ibu-lie-kind
The IBU math is based on one person’s system and he only used whole leaf hops. Super fast cooling I think has more of a lowering effect than a low boil point.

Fermenting: We Are The Dreamer of Dreams (NEIPA)colterwKeymasterTo be honest its not that big of a deal but there is a little maintenance. That being said this is a great way of capturing wild yeast strains.
